They did, in 744 BC, but this was centuries after the famous monuments were built. There are a lot of monuments to the Kushites left, and the ruins of their pyramids.

They were, just not for most of Egypt's history. Taharqa's reign was considered a prosperous period for the empire. They occupy a similar position to the Assyrians, Persians, Greeks, and Romans who conquered the country.

Nubians also built their own pyramids in Sudan which still exist.
