But, because of 'muh COVID' and 'muh mail-ins' the Democrats were basically given licence to print as many ballots as needed until they could flip the election

Dec. 14th is the cutoff before the Electoral College is supposed to meet. That’s generally the threshold.

However, Congress still has to certify the election results after the Electoral College votes, and that isn’t until mid-January, maybe January 12th. That’s the fallback at which a pair of Congress members, 1 from the House and 1 from the Senate can effectively force Congress to consider the legitimacy of the election. There’s some mechanic through that which enables the VP, Pence, to reject electors.
