A quick correction: He actually doesn't do that at the preliminary hearing. The preliminary hearing in PA is a hearing to see if there is a prima facie (i.e. "on its face") case that (1) a crime was committed and (2) the defendant committed it. If the state is found to have a prima facie case (this pretty much always happens as the standard is very low), the case moves to the main county court (court of common pleas) for formal arraignment, and this is where the initial plea is made (this is almost always "not guilty" -- the "guilty" plea as part of a plea bargain happens after this).

Because of this prima facie standard, preliminary hearings are the first chance to see the witnesses involved and often hear from the defendant -- and, as with the Nick Bate circus, are often very informative/fun to attend. By contrast, most subsequent proceedings don't involve many fireworks (almost all cases end in plea bargains and those negotiations take place behind the scenes).
