I noticed as I was watching some of the older and more prominent hbomberguy videos that there are a lot of terms, phrases, and talking points that he uses, even little ones, that Jerry has straight up jacked, for instance every use of "Carlgon", "Thunderfzerozerot", or most notably "SJeW" back when that was a thing, or when someone told him to debate Sargon (in retrospect it would be incredible to watch those two lunatics converse) and Jerry talked about how "every debate Sargon is in he's lost" (can't find the post he's said this, but he's said this), while Sargon's really, really bad debate with Kristi Winters was a main point in one of hbomberguy's videos about him. To say nothing, of course, of "X is Garbage and Here's Why", or Jerry's other general plagiarizing habits like taking quotes from TV Tropes for IAM or designing an entire video series to look and feel like someone else's work (ZP and RVI)
We also know that he likes to fellate himself to make himself sound smarter than he actually is, or artificially give himself more credentials and thus authority to speak on a subject than he actually has

Weird thing with Lily is that if she doesn't like something, for whatever reason, she takes it too seriously and it's the worst thing ever. If Lily happens to like something, everyone else is taking it too seriously and just can't have fun. It's Family Guy, calm down. It's Kingdom Hearts, it's supposed to be stupid. That kinda thing.
Ratatouille is only bad because she probably got bored, woke up just in time for Ego's speech at the end and totally missed the point. That or she doesn't like that it kinda calls her out on being such a jaded, negative nancy about everything she watches. Criticism is a very VERY easy job and Youtube is probably the best cesspool in existence to prove that point. Anyone with a snowball mic, decent editing software and a wall covered in Ninja Turtle figures can come to believe they are a renowned film critic (see MovieBob, ConfusedMatthew, etc.)

Ego's story was not "I was sad", Remy's food made him nostalgic for his own childhood and that is why he gave a positive review after knowing who made the dish pontificating the message of the film "innovation and talent can come from anywhere and anyone "
he has not been redeemed because the film is not about redemption, there is nothing to be forgiven as he is just doing his job, he is an antagonist an obstacle, not the villain of the film
stop with your obsession with redemption arcs, it looks like PTSD at this point
and he didn't give up on his job, he was fired because his reputation was ruined after the news found out that the restaurant he said was "the best" was infested with rats

The thing about ratatouille is that they don't imply that Ego was wrong in his assessments. If they had shown some of Ego's victims crying and sobbing and people being like "wait that food is actually good, he was just being an asshole!" then lily would have a point. But like, even Gusteau's is still in business after losing 2 stars, there's not really a sign of the restaurant going through financial trouble or anything
In the end, it was revealed that Ego did what he did because of his genuine love for food and he is very fair towards a very disadvantaged chef. Again, if he had slammed the restaurant while loving the food, lily would have a point, but he was completely sincere and even helped the new, independent restaurant

(also its really funny how she says people shouldnt take like 50% of what she says seriously but suddenly she has a really deep respect for critics lol)

Yeah if it was an anti-critic movie they would've defeated Ego and proven his opinion wasn't worth anything, and then dumped a bucket of water on him or something.
But the movie respects his character and values his opinion, which is why it's significant that Remy's food reminds him of why he loved food to begin with. The movie is about passion and perseverance, Ego stands in the way of that because he has become jaded and pompous, which is why it's amazing that a single dish can garner genuine emotion from him.
Maybe if the character turned to the viewer and announced how he felt at a 4th grade reading level, Lily would be singing the movies praises. I guess it just went over her head.
