It's supposed to be a play on the Generational naming things. Gen X are your parents, Gen Y (sometimes referred to as iGen) is the current generation, and Gen Z (or Generation Zygotes) are the kids being born/conceived at this time. This show is basically fucking up the next Generation.

The irony is, most of the more insane Gen Y's scream that this is what Baby Boomers are doing.

I would say that white people playing black people although offensive now was not in the past because historically there was a shortage of black actors. Although I would prefer cis women to play transwomen it is still difficult to find trans actors

Well, the marketing of Gen Zed is working wonders. When you know that you have a terrible product that nobody would care about it, one of the many options you have is to make it "controversial" so you can have free publicity and gather as much people you can, even if they don't consume the product itself.
Problem is, when that controversy is about something that not many people care about and you're actually taking the side that will more likely bring you nothing, your product is doomed.

Example: My little pony: Friendship is magic. That show aimed at little girls at first just to market their toys and that's about it, when the chans discover it and start making a fuzz about it, the producers had 2 options, acknowledge the chans or ignore them and continue doing it stuff (pure marketing and ignore the fanbase). We all know what the producers chose and how that serie is doing so far.

So, Gen Zed, they know they have a terrible premise, they know they have bland animation, they know the "jokes" are dumb so the only thing they got is to appeal to Tumblr since TRANS. Milking the SJWs is a good business if you know how to do it, Brianna Wuu is a great example of this, but with a cartoon serie? how could it work?. Mark my words because I'm certain this is what's going to happen:
Season 1 of Gen Zed airs and chans hate it, the shitfest goes on until it ends. When it ends, the investors realize it was a mistake, they back up. Gen Zed staff are butthurt and now they turn to phase 2 of their plan: "Hello people, Gen Zed was a success but since CIS white male patriarchy is strong in the cartoon business, they got us cancelled!, they can't handle the truth!, they don't want us to be succesful because we're trans!, patriarchy!. So now we depend on you Patreon people to keep us afloat" The serie will now be a web serie and they'll milk the SJWs one dollar at a time.

TL;DR version: Gen Zed is trash so they stir shit up for free publicity. They'll milk the SJWs afterwards.

Ian McShane is not, in actuality, a whiskey swilling badass saloon proprietor of an old West mining town, or a pirate, or an as yet unrevealed denizen of a mystical fantasy land...or, I suppose, to use a more tumblr friendly subject, Benedict Cumberbatch is not Alan Turing, or Sherlock Holmes, or a dragon. But until the real dragons and pirates show up and start out acting these actors in auditions, we're just gonna have to settle for what we get.
