Despite ostensibly having limited time to file legal documents [you'll often see, "Respond within 20 days", etc], people tend to have a lot of leeway, so long as counsel for one party notifies counsel for the other that they need additional time to file. Only in cases were there is an egregious delay in filing will the court step in and give them a hard deadline, usually something along the lines of, "You are hereby ordered to furnish a reply within 10 days" which tends to be a strict limit, with the threat that a case will be dismissed if there is no reply.

I watched a little bit of the second subreddit before that got nuked. I feel like by middle of 2019 the entire O&A drama had kind of petered out. The failure of Ant's book was the final nail coffin for his comeback attempt. Joe had been driven into exile do to his numerous defeats at the hands of the subreddit. There was nothing really of value left.
