There are so many different Vtubers now, it just takes a bit of searching and you can probably find more than you can comfortably watch. Sadly I don't have much knowledge in the other groups, but even amongst Hololive you have people that play some of the popular stuff (Minecraft seems to be one of the main games they play for easy/chill content and views) with some niche stuff, or people like Botan who's recently been playing Payday 2, which was a crazy nostalgia trip and Kiara mostly plays RPG's and even had a stream of World of Warcraft, though that might end up being a once off, thanks Activision-Blizzard.
Something I try to remember is that if I can find people that even only sometimes play games I like, it makes it easier to keep up with those particular streams. As it's been a nightmare trying to watching everything they're putting out, espicially those extra sadistic ones that stream 6-12hours or more sometimes.
Edit: I should note that Hololive do suffer maybe more than other groups from the "Flavor of the Month" which is probably a mix of people being interested in the new shiny games like normal people, and that Cover after the copyright disaster last year (I know it's more complicated, but Fuck Capcom and to a lesser extent Nintendo, get with the time already) probably now organise a legal written agreement for each game and what monetization is okay.
