You know their ads do have a “Pet owner who has never once given a shit about dog nutrition and now feels guilty their pet is dying” vibe

Do you have a source for this?
Yes, I had to research a lot of foods while I was figuring out my Siamese cat's allergies. I used this site- http://catfooddb.com/ The eating shit part was just hyperbole.

Most pet food commercials do. They all want you to think that shit is gourmet meals packed into each kibble.
He's exaggerating about the eating their shit part, but hills is like 1 step above Purina or pedigree. It's absolutely awful for cats. There's much better brands out there with better ingredient profiles that cost about the same.
Purina ONE ranks higher than it even- at least when I last checked.

Do these people genuinely enjoy this, or are they trying to be unique and "quirky"? Sometimes I really do wonder.

It's kind of like the nutrition density of human food as well. If you have nutrient-dense food, then you don't need as much food to stay alive. So when you feed something higher-quality food it avoids the problem we see (again, also in humans) of being overweight but undernourished.
