Last time I played Old World there wasn't much of a downside to letting every religion in because you could double dip on their religious buildings if you had enough tiles. It also becomes your religion if you conquer the holy city.
I am pretty sure it will not work on a difficulty higher than noble. It's impossible to cater to all religion leaders when most of them are outside your nation, and having a family not being converted to a state religion will fuck their relation. You will get religion dissent in cities on top of that. There is a way to have many religions and not being raped by rebels, but you have to invest in happiness buildings from the get-go, sacrificing a lot of stone.

I'm having an itch to play a Total War game again

Which ones are worth playing nowadays?
From most current to oldest of the new generation of TW games:

Pharaoh Dynasties
Warhammer 3 (my recommendation)
Saga: Troy
Three Kingdoms
Thrones of Britannia

WH is the most interesting Total War experience right now with all kinds of shit the other ones don't have (they put a lot of work into making the factions and lore different and interesting, altogether its a huge difference in overall content when each faction feels like a different game).

That is fair, I mainly played on "The Strong" so laws and legitimacy trivialised happiness and family opinion by the mid game, assuming I got the luxuries they wanted and picked the obviously dev-favoured wholesome chungus laws (Tolerance and Freedom).

70 bucks for a new age of wonders 4 season. I think, I am gonna skip that one.
At this point they stuck in a paradox mindset - "let's add more bloat instead of focusing on a complete and coherent experience". So things, like production and food being borderline useless will never be addressed.
Dived into Conquest of Elysium and not even going look back. It's like AOW games, but with boring things cut off

Also Old World is 90% off. Go grab it, you niggers. It's a steal!
Which, if any, DLC are necessary or add a lot more to the game? As someone who doesn't want to go near Civ 7 with a 50 foot pole, I have been eyeing this game for awhile.

Also, I know it isn't exactly 4X, but has anybody seen Master of Command? I have been craving some good Napoleonic warfare after I have blown through Empire and Napoleon Total War.

And I had some fun with Shadow Empire's mayhem mode, but I am waiting for Republica to really dive back in.

Don't buy dlc for Old World. They all are really minor when it comes to the meat of the game. Wraith of Gods may be.

Age of Wonder 4 looks pretty cool but looking at the pricing and the fact they are still not done adding content tells me I will probably be able to play it at the earliest in a couple of years.

I had really good Old World playthrough that really highlights the strong points of the game. It was the fourth Learning While Playing scenario as Rome. Rome gets very little stone, but hills filled with iron and is surrounded by enemies. Greece starts in the middle and Babylon on the far side of the map to the east basically playing sim city. Rome is in the center-west basically blocking the expansion of two other civs. Basically similar to IRL Rome, with the Persians on an island filling the role of Carthage and the Hattusans to west being the Spanish.
___

With the iron available the most obvious strategy was to infantry swarm nearby Barbarians/Hattusans and build up a very experienced army through constant war. The Persians from the island invaded after being insulted. This while there were wars on all borders were ongoing and this war was from within since the Persians could land anywhere. While all of this was happening a massive slave rebellion began that various courtiers failed to bribe and break through intrigue. The hoard demanding the end of slavery got their wish (along with a massive bribe) and dispersed. After a drawn out war while fighting on all sides against tribal invasions and the Hattusan remnants bad news arrived. A new Babylonian king had taken the throne and he wished to prove himself through a war of conquest against Rome. His father had conquered Greece and he needed a conquest to surpass his father.

The Roman army depleted from its siege returned home and healed as reserves and conscripted workers turned to fighting as militia got massacred. The Babylonians commited most of their army against the southern city of Volubillis that had become a cultural capital of Rome and seat of its new Christian religion so everything would come down to one front. As this war was beginning a new man took the throne. Freed from gallic slavery this man had been a Vandal who had won over the heart of an heirless king enough to be adopted. The uncle of the previous king who had been the previous heir had tried to kill the flambouyant previous king so this was not just a random decision. The revitalized Roman army now updated from Hastati to Legions was extremely elite. Converted to Christianity this army was also united in purpose and the people rallied in support of their new heroic king despite his heritage (with many events giving free stuff).

A true hero this Vandal King lead from the front cutting down the invading force... but the eastern masses were endless. All of the previous wars had been fought on hills or in forests, but as the the Babylonians were pushed back the land opened up into a wide vast expanse of arid plains. Babylonian archers attacked on all sides from extreme distances threatening to annihilate the Roman crusade. Falling back to their city a desperate rat war was fought in the city streets with Roman gladius clashing with Babylonian maces under a hail of arrows and stones. A Vandal being on the Roman throne was odd, but would also change the tide of the war. The Vandals had converted to Christianity upon hearing of the adoption of a Vandal for the throne and as the war turned against Rome had joined the war to help their brothers.

Game kinda ended there since I got enough development to win the scenario. Was pretty fun to see the narrative/character stuff fundamentally influence the game in a meaningful way. I ended up with a more egalitarian and multicultural Christian Rome fighting eastern despotism without even larping to make it true. I had picked slavery to maximize iron production and was not really roleplaying at all.
