Air Fried Dumplings

1 pound of ground meat (your choice)
6 diced green onions
3 teaspoons worcestershire sauce
3 inch diameter dumpling wrappers made from dough

Mix the meat, onions, and sauce in a bowl. I like onions and worcestershire sauce. But you can mix any vegetable, sauce, and seasoning you want. Then you take your meat and wrap it up in the wrappers. Wet the edges of the wrappers to seal them shut. Once you have your dumplings wrapped, boil them in water to cook the meat. The way I like to make sure my meat is cooked is by bringing a pot of water to boil, pouring the dumplings in so the water stops boiling, waiting for the water to boil again, then dumping some cold water into the pot so the water quits boiling. Once the water brings itself to boil three times, I know the meat is cooked.

Then I take the cooked dumplings and chill them in the refrigerator. Once they're cold, I cook them in the air fryer. That way I get a crispy skin without the oil.

My favorite? CHEEKEN WINGS!!!!

We cook all kinds of stuff in our Gourmia air fryer, but wings are by far my favorite. Just spray lightly with some canned canola oil, spice ( I use a Cajun mix), then air fry for about 20 minutes. They turn out as crispy as if they were deep fried. Once done, into a pan on the stove with the sauce (I like Sweet Baby Ray's Buffalo Sauce). Cook about 5 or ten minutes until the sauce thickens on the wings, then gorge yourself on winged goodness!

Wife did pollo fundido the other night. Chicken-based chimichanga wrapped in a tortilla (usually deep fried). The air fryer did a great job with this as well.

We also do beer-battered fish. Yummy!

The trick that I've found with using the air fryer is always use a VERY light spray oil to obtain crispy and to keep everything from sticking to the pan and each other. This is one appliance that once you start using it, you wonder how in the hell you lived without it for so long. So much healthier than deep frying!

I did this chicken tendies recipe recently using proper chicken tenderlions, though I suppose you could make it with thighs or strips of breast if you're some sort of heathen. I also opted for standard bread crumbs rather than crushed pork rinds as the recipe suggests. It was damn good. I'll definitely be making it again in the future.

I buy big sacks of Brussels sprouts and throw a handful of them in the fryer whenever I need a veggie side, since they'll last pretty long in the fridge. Peel off the drier outer leaves before cooking (they will burn a bit if you leave them on), wash them in a colander, fry, sprinkle some salt, and you're good to go. Brussels sprouts get a bad rap but they basically just taste like tiny cabbages. I like 'em. You can make a glaze of melted butter and honey if you really can't stand the taste by itself though. I'll also fry up frozen hash brown patties for breakfast. Not the healthiest even though they fry up great without a drop of oil, but still much healthier than the deep-fried ones you get from McD's.

If you don't have an air fryer yet, I recommend getting one that's also a toaster oven rather than one of those canister-shaped ones that only does air frying. The larger size lets you fry up more stuff without stacking and, of course, you can use it to toast or to bake up smaller things more efficiently than your "full-size" oven since it doesn't need to preheat.
