My father is going to be in town and I want to grill his favorite food, does anyone know if there are any lesser known quirks to grilling sturgeon.
 
Is sturgeon a particularly fatty fish? I actually don't think I've ever had sturgeon. If it's more lean/firm I'd be worried about grilling drying it out.
