My favorite video on an explanation of why so many companies do this shit. Basically they created an "Art System", keyword system. They want the art to be interchangeable so that someone can't get famous for having a unique art style, and then have more power in terms of their un-fireability. It also makes NPCs calm in the sense it's like modern furniture where everything is black and gray boxes, they feel at home because everyone is doing it. Being impossible to be racist is also another key selling point. They aren't human at all, but you're never gonna see any white alegria people for SURE. It's always a shade of brown and they are always wearing burkas or non-american clothing.

Basically that.

You don't draw/illustrate anything, you change the face, pose and skin color, and plaster it somewhere. Really basic and simple. Really easy to implement by anyone (read, 3rd world underpaid workforce). Nothing stands out, and can be done quick and cheap.

The shift from skeuomorphic to flat design is a reflection of the entire societal and evolutionary zeitgeist surrounding technology. No longer is it of any importance for a corporation to communicate to you the express purpose of their product. It's to be obfuscated as necessary to increase profit. It's to be reduced to it's most basic and primitive components and mass produced without any concern for the end user.
