Outside of any cgi moves, I believe that all of the prequel fight scenes were done by the actors. When Count Dooku is fighting, that is Christopher Lee (or his stunt double) in his 80s demonstrating real fighting moves. Sir Lee had to learn new techniques for the role. There's a lot of behind the scenes footage of the actors rehearsing their fights and the long takes made it clear these were not stunt men. It makes me appreciate the work that went into the movies even more.
