I was once told by someone whose boyfriend is allegedly a chef that I shouldn't buy Australian steak, "it's no good" and I'm like wtf u talking about, I buy this shit all the time, it's FINE, it's not tough as shit if you know what you're doing and how to compensate for the fact that most Aussie beef is ultra-lean grass-fed range beef, you don't treat it the same as grain-finished North American fatty beef.

Some chefs just aren't trained properly.
