Well it's not like Richard here knows that hydrogen fuses in stars to create helium and by doing so actually gains neutrons. (Before that, hydrogen is the only element without a neutron). Once it's out of hydrogen, it'll start to fuse heavier elements (resulting in a helium core) which after collapsing will start burning off the helium.

Why is Hydrogen so common? Well as I said, it's the only element without an neutron making it a very simple element. So when the Universe was first created, quarks stuck together to make the first protons which would then combine with an electron to make hydrogen. (Hydrogen only has one proton and one electron, you can see why it would be the most common, it was so easy to create).
