Atherosclerosis was a very rare disease before people started eating seed oils and refined sugar in vast quantities in the early 20th century. The sugar is what causes the arterial damage. The unsaturated fat and hydrogenated oils are what fill in the damage and clog you arteries.
Ever heard of trans fats? Those are the hydrogenated oils. They're listed at 0 grams on every nutrition label because they were banned for causing heart disease. Corporations wised up and started bribing before introducing partially hydrogenated oils, which are not banned.
I always thought the eating right rule was basically everything in moderation instead of just cutting out everything.
