I think its more that discord doesn't aim at an age like most social media does. Facebook is for old people, twitter is middle generation and tik tok is younger, games appeal to age crowds as well but discord isnt age segregated and when you have mixed age groups hanging out together it seems the moral compass and due dilligence of many people doesnt exist. They're hanging out and opposite sex and the victim is too young to realize its wrong for certain people to be even friends with one another. As for why Pedos use Discord. Same reason they use telegram. Same reason Pedos and hookers are the only people on WhatsApp. Same reason they used to use MSN. Same reason they use Facebook. Same reason they used to lurk IRC. The same reason it happened on fucking WoW and TeamSpeak. It's private, at least in some places. Wherever there is a private chat function and vulnerable people you'll find groomers. If our own site didn't have such a strong policy against children then DMs on here would be full of grooming with forums dedicated to the stings.

Discord is just the current popular chat app, and thus it is full of groomers. Remember the majority of these servers are at least semi-closed and semi-private communities. It's not like you can just wander in on them from Google or from a master search function. The chats that you can get to that way tend to be the ones that are the least likely to permit any stuff because they need to maintain their squeaky clean reputation. But the more private the environment, the more likely there's a groomer.
