For those who don't know, a fanedit is a version of a film modified by a viewer, that removes, reorders, or adds material in order to create a new interpretation of the source material.
A lot of times it's done to improve a film (what's known as a fanfix in the fanedit community) such as the 90000000 SW prequel fanedits that get released per year.
Other times it's done to create something new entirely (such as a fanmix that combines 2 films into 1, for example) or just for preservation (such as creating HD versions of a film) or other purposes.

Fanedits of series also exist (such as conversions from series to films)

Fanedits got really popular ever since the Phantom Edit was released, a fanedited version of the Phantom Menace that removes, among other things, Jar Jar's idiotic behavior and removing Anakin's annoying "YIPEE" and "OOPS".

They've done some amazing things:

For those who have seen fanedits, what are your favorite ones? Mine are Batman Forever Red Book Edition and Return of the Sith Revisited for SW1.
ROTS actually turned SW1 into a decent film, even if not amazing, so that's saying something right there.

I like the various Dune fan edits that restore the film to what Lynch's original vision was.

There's also a number of edits film maker steven soderbergh made and released. He did one for Heaven's Gate that cuts it down significantly. Another that is a more experimental take on 2001.

Always wanted to find Episode 2 & 3 fan edits to go along with the Machete Order.

Haven't seen any edits for Ep. 2 or 3 myself, but I've heard HAL9000's edits of both films are pretty good.
 
There's a YouTube channel called SomethingWitty Entertainment that did an abridged series of Sword Art Online in a way that actually managed to vastly improve the anime's story to the point that I'd say watch it over the original.
 
Looking back at the OP, I should have added series as well. Hell, there even exist fanedits that turn series into films. EDIT: Done.
 
I saw a fun edit of Episode 1 that did it up as an old silent serial.
