Fossil foods - What extinct animals would you eat? How would you prepare them?

I'm more interested in eggs. I'd tuck in an Elephant Bird egg omelette stuffed with giant tortoise meat.

Entelodonts - Not just because I love pork, but because I would feel bad-ass eating something called a "Hell Pig." I would barbecue the hell out of those giant pigs.
