Defunctland is pretty great if it hasn't been mentioned yet.

This guy also does really well produced and researched mini-docs on defunct rides and theme parks;
 
J.J. McCullough is always my first recommendation. His videos are fun and easy to watch without being shallow, and are usually about American culture, Canadian history, or the culture of other places. Ever wonder why Canada is just America but more pathetic?
What do other countries think is "American"?

Next is Pseudiom, his videos look nice and are about obscure and interesting bits of (usually American) history and (usually American) pop culture, and internet history (of the American net). Topics can vary, I stopped watching him for a bit because he can veer wildly from your personal interests. He's severely underrated (averages 2k views per video).
 
Wendover Production has a lot of good shorter documentaries. This video does a good job explaining the reason behind the shortages today

 
Someone's already mentioned Defunctland, but this is their magnum opus for sure. May look boring but is actually very interesting, especially if you're into industrial engineering and innovation.

I'm not a theme park person, never been to Disneyland, and I find almost all of Defunctland's videos highly engaging and entertaining.
