Hot Take: the only reason people cared about her was she was Face Bailey's NXT foil. Now she is basically a middle of the road cunty heel for whatever woman she is up against. Without Bailey as a counter point no one really cares (barring wrestling coomers).

Outside of MMA and the Olympics? There is a grappling centric tournament I'm vaguely aware of that seems like a big deal. Outside of that you won't find any kind of league because the interest isn't there.
Strangely, her literal "mean girl" character that was a trio with Summer Rae and Charlotte was better. She did have growth, it was just negative.

There isn't really a league. There's world championships for the various types (freestyle/greco-roman etc) and the Olympics and that's about it for pure wrestling. There's also submission grappling, which as the name implies combines wrestling and various other martial arts (most prominently BJJ), which has the Abu Dhabi Combat Club championships which are probably the biggest/most high profile grappling tournaments.

Those people you speak of don't actually watch non-American wrestling. Hell, I'd be surprised they watch any indies within the states let alone aboard. Willing to bet these are the very same people that only consume wrestling via clips and gifs shared via social media and make judgements based upon what ol' Dave says. It's too much of a "hassle" to seek out her work or they cannot afford it. I don't think most of Mercedes fans get that she is only holding that belt as a marketing ploy the same way the NJPW US title was intended to be.
