I was hoping to get a thread going for good gluten-free recipes. I apologize if that is a bit too broad of a subject but really any good gluten-free recipes are very much appreciated. Unfortunately having celiac tends to make it difficult to try recipes you find online, it's not as simple as just substituting wheat flour with rice or potato flour as all three of those have very different properties, and as I have learned the hard way on several occasions it can lead to the dish coming out as an unrecognizable mess.

Sadly the vast majority of gluten-free recipes you can find online are from self-righteous Californian faggots who are just as tasteless and full of soy as the "recipes" they provide. Usually, they are retards toting gluten as the food of the devil. And most of the time the recipes aren't just gluten-free, they're also egg-free, non-GMO, organic, dairy-free, vegan, lactose-free, and essentially fucking taste-free. I was hoping to compile a thread full of good gluten-free recipes from non-pozzed individuals for myself and any other Kiwis who might be unfortunate enough to have celiac.

If you got em, post away.
 
Steak and asparagus (or mushrooms, or whatever really).
Fry the steak in a lightly oiled pan, fry the asparagus (or whatever) in the oil from the steak, use arrowroot flour to make a gravy from what's left.
Any kind of stew just replace flour with arrowroot flour.
For the most part sushi is gluten free with a few outliers.

Also, fucking off is gluten free.

Edit: This one is good enough to put in the rotation-
  • 2 lbs boneless skinless chicken breasts
  • 1 cup chicken broth (this is to pour over chicken in slow cooker)
  • 1 onion chopped
  • 1 green pepper chopped
  • 3 garlic cloves minced
  • 1 tbsp butter
  • 6 oz cream cheese
  • 2 10 oz cans diced tomatoes with green chilis
  • 2½ cups chicken broth
  • ½ cup heavy whipping cream
  • 2½ tbsp homemade taco seasoning (recipe here or 1 packet of taco seasoning)
  • salt and pepper to taste
  • Cook boneless skinless chicken breasts in a slow cooker for 3 hours on high or 6 hours on low in a cup of chicken broth. Season with salt/pepper.
  • When chicken is cooked through, remove from slow cooker and shred. (You can strain the leftover broth for the soup.)
  • In a large saucepan, saute green pepper, onion, and garlic in 1 tablespoon of butter until they are translucent.
  • With a spoon, mash the cream cheese into the veggies so that it will combine smoothly as it melts.
  • Add the canned tomatoes, chicken broth, heavy whipping cream, and taco seasoning.
  • Simmer on low uncovered for 20 minutes.
  • Add shredded chicken, cover, and simmer for 10 minutes.
  • Add salt and pepper to taste. Enjoy hot!
  • Optional: Top each bowl with shredded cheese, cilantro, green onions, avocado, and/or sour cream.

I like to make almond pancakes sometimes. Just mix 1 cup of almond flour with 1/4 cup of milk, 2 eggs, salt, and maple syrup to taste. Cook like normal pancakes and you got yourself some tasty pancakes. If you want a sort of marzipan like flavor, you could had a little almond extract as well.
 
After much trial and error I've stopped trying to recreate wheat based recipes.
If I get a massive craving, I just buy some gluten free pasta or King Arthur gluten-free baking mixes. (King Arthur isn't the cheapest but they're my favorite and someone else gets to go to the trouble of getting the ratios right.)

Otherwise I just have potato or rice based dishes instead of noodles for starchy goodness.

Rant - cauliflower as a pizza crust ingredient is an abomination. Sure it can taste okay but seriously. Cauliflower? Pizza? Those things should not be mentioned in the same breath.
 
My tests are negative for celiac but I'm still off gluten for the foreseaable future. The doctor told me to just keep avoiding it for now. Within a few days my abdominal bloating pretty much stopped and I looked so much thinner. My lower body looks so much different. But I miss stuff like soft pretzels, coffee rolls and crackers. It sucks that all the gluten free products that look good are expensive hipster foods. And yeah, the same problems with "egg free nut free dairy free meat free soyboi taste free" crap with recipes and packaged products.

I did have a really good bag of gluten free pretzels a few years ago. I didn't even notice they were gluten free at first. They were on sale. I wish I could remember what they were.

Cauliflower crust is fine, you're just a fussy food pervert.
 
I eat konjack noodles and I do not taste much of a difference. My go to brand is naked noodles. I found a better brand but I have not seen them again in Aldo's. They can be eaten on the keto diet so you should be able to eat them.

Also I don't have a recipe, but I got this stuff called Pakora at an Indian restaurant, and it's basically a hush puppy made of cauliflower and chickpea flour but it tastes even better than a real one.

I bought some of these on sale. It's damn near 100% tapioca starch that you mix with cheese, milk, and eggs to make a pizza crust, and it worked well. Very easy to shape.

Gluten-free people should get used to eating rice. Or use those 1:1 flour substitutes like King Arthur. Or make your own with a flour mill.

That sounds pretty damn good, I'll have to look into that. The worst part is being in college and subsequently broke as fuck while still trying to be gluten-free. Whole Foods has a ton of amazing gluten-free food but it also costs like 90 dollars for two bags of groceries. Luckily Arizona is pretty good to be gluten-free in because of the large beaner population. Plenty of bomb Mexican restaurants to go to for dirt cheap.

The only downside is that 50% of them unironically hate white people and I have to look like a retard when I walk into "Los Tacos Apson" and ask the barely literate Hispanic owner if the tortillas are gluten-free only to have him look at me with total confusion before signaling his half white daughter to translate what the fuck I am asking him.
