I've yet to play them but I hear Sonic Before the Sequel and the follow up Sonic After the Sequel DX are okay.

Avengers United Battle Force.
Big Bang Beat X Street Fighter.

There's plenty of good fan-stuff made things around, these ones are a bit crude (Save for Clover), but they're good shit, yo.

It's a different series, but Rayman Redemption is great. It's a fan remake/remix of the original Rayman, with expanded level designs and a revamped moveset (like having the helicopter straight out of the gate). It also comes with an infinite lives option, which is nice given how grueling the original game was. It's insane how seamless all the changes are too. It's as close to an enhanced remake as you can possibly get with the original Rayman, and I highly recommend it to fans of the series.
