It's this, proper fresh (even frozen) fish doesn't taste "fishy". It used to be more of a problem but even the tiniest shittiest indo-pacific fishing trawlers have freezers onboard now.The fishy taste comes from trimethylamine which is produced as the fish breaks down after death.
BTW cover your fish when you cook it in any way other than high heat frying. That tends to help it from getting dry on one side and rubbery through the rest of it.
