How do I get him to stop? I'm really worried.

Each night, when he goes to sleep, sneak into the tunnel and move some of the dirt from the right wall to the left so it curves slightly rightward. When the tunnel eventually meets itself, tell him he managed to tunnel all the way around the world and he's done now.

That sounds like a nice hobby they could do together.

The girlfriend is obviously worried about adequate support beams and ventilation, so that could be what she works on while he's doing the excavating.
