How do I rise pizza dough on the counter? - I've only used the fridge-rise method until now

I'm paranoid that I'll dry it out or over-rise the dough. Also, do you guys sift your flour instead of throwing it out when you find flour mites?
 
Homemade pizza dough really is just a bread variant. Perfectly acceptable, even better in many cases, than what instinctually comes to mind when thinking pizza. So treating it like bread, but flat-ish is the way to go.
