How much ammunition is too much?

As long as it's properly stored so it doesn't degrade, just buy some when it's cheap and you have the money. Buy more than you shoot. You don't want to need to buy during a panic.
How do you define properly stored? I live in Australia so it all has to be locked away, but should I get some silica gel packets to reduce moisture?

Yep. In an airtight container with silica packets. I forget the recommended amounts for standard ammo cans, but there are plenty of guides for that online. The amount will be based on the size of the container. Get the kind that changes color so you know when it needs to be recharged.
 
Ammo prices are so high rn I haven't been buying any. I keep about 1k rounds on hand for all my calibers. Still buy more if you find a good deal but it becomes a hassle to store/move quickly.

As much as you can reasonably afford and store properly. It will be used as currency if it ever comes down to it.

exception if you live on your own property far away from the nearest town and have some kind of prepper bunker, in that case feel free to stack up literal tons of ammo down there.

Here we're still getting ammo at the pre-covid prices, but anything that gets imported now will be about 25% more. Ammo is stupidly expensive here, I pay $40 for a 20 box of .308. Getting 1000 rounds is beyond my capabilities.
Good god, I am so sorry. Are you able to order in bulk online, or even make deals at the shop? I've made a deal with a local gun store before to buy in bulk at a discount from their store price and they were willing to do it because otherwise they'd lose me to online. I buy a couple thousand at a time. It's still more expensive online, but I'm happier to be buying local and keeping money around. .308 is expensive and I don't shoot mine often, but it's still way less than you pay.

Nice to see you repping Ruger btw. Is that what you shoot?

I'm sure it would be slightly cheaper, but we also have laws restricting the postage of ammo, so it has to come via courier, so it probably works out the same. The only thing cheaper than 308 here is 22lr, which is about $15 per hundred. A buddy of mine just got a 45-70 and he pays $100 for 20.
I have a couple of Rugers, they're inexpensive and reliable, which is all I need. If we could still get semi-autos I would have a 10-22, they look like fun.

Ruger makes a great blue collar gun as you say. They're semi local to me, so it's cool seeing someone in Australia enjoying them.
