So outside of my house theirs a shit ton of kittens with their mothers, I found a set of them about 4-5 weeks old a couple days ago that I fed some turkey to the mother and one of them has been eating it. and this morning I found 3 that look to be about 2-3 weeks old. When my fiancé checked on the set I found this morning one of them was missing. The mother from the first set is slowly building up trust me and stopped trying to attack me last night.

I’m currently waiting for the Animal Shelter to open up so I can call them ask them what to do and my Fiancé is keeping watch over them.

What should I do? I’m really new to this and don’t want to do anything that will endanger the kittens or their mother.

Don't try and move them so soon if they don't know you. This could stress them, and you don't want to stress young kittens to much. If you haven't already and they don't have anything, set them up some sort of shelter, like a box or something, somewhere out of the heat or rain, whichever you've got. I assume you've already left food and water out? And it's good that you're monitoring them.

Also: can we see them.

I would inform you that you are now the proud owner of several cats and that you must clean them up and buy a cat tree for your home and devote the remainder of your life to their worship, but I know each of us has different capabilities and extenuating circumstances. If you don't intend on keeping them as pets I don't want to guilt you into doing so, as I would much rather they go to a home that wants them etc. But for the time being you should get them fed, cozy, and clean them up a bit if they are looking a little manky. Maybe keep them for a night and sleep on it before you decide whether or not to keep them and invest the time and money into vet, food, and care bills. As Cats, I must say each second of time and penny you spend on the little guys will be worth it, though, and I hope you end up keeping them.

Your descent into crazy cat lady and man has begun. There is no escape. Make your peace with your God and embrace it.
This. Also OP cats do well living together provided they can have their own spaces and enough litter boxes. It's actually encouraged to adopt kittens in pairs! Hope you can keep the trio together with mom!
As soon as you can have them see a vet. It's important to keep kittens that young flea free otherwise they can die from blood loss and flea bites.

if you wanna give them to a shelter the sooner the better. as the kittens need human interactions to avoid being feral. the mother is a bit more iffy. she might warm up to people or she might lose her shit and end up getting put to sleep. if you can find a no kill shelter or even a catch spay and release place that would be the best if you are worried about something bad happening.

This. The Kittens can probably find the home if they go to Shelter. The mamas should be spay and release. If you want some cats for yourself, pick two of em.
