Minecraft.

There was this special charm to having this wide open area to explore for the very first time- your first house and night, finding a cave system, working from wood to diamond tools slowly and steadily, finding weird and interesting structures in the game. Subsequent plays are never the same- you know what to do, how to do it, etc., Etc,.

I'd want to wipe my knowledge of Minecraft, throw myself back into the first update I played on, and go nuts again.
 
If I had to only pick one? I'd probably go with the first Resident Evil on the PS1.

I still have fond memories of playing the original RE trilogy as a little kid in the late 90's. Granted, I was probably way too young to play M-rated games back then, but still, it was awesome.

Overall, I'd say it would depend on the generation or era in question.

There's several games I'd like to be able to experience for the first time all over again.

Fourth Generation: Super Mario World, Super Street Fighter II: Turbo, Mortal Kombat II

Fifth Generation: Syphon Filter 2, Crash Bandicoot: Warped, Spyro 2: Ripto's Rage, CarnEvil, Dino Crisis 2, Digimon World 2, or any of the first three Resident Evil games

Sixth Generation: Grand Theft Auto III, Devil May Cry 1, Morrowind, VTM Bloodlines, Dynasty Warriors 4, Dead or Alive 2: Hardcore

Seventh Generation: New Vegas, Mafia II, Red Dead Redemption, Time Crisis 4, Skyrim

Eighth Generation: Final Fantasy XV, Resident Evil 2 Remake
 
Breath of the Wild for me.

That game is all about discovery and the less you know, the more fun it is. I will play it again, but you gotta admit, it won't be quite the same in subsequent plays.
 
Bioshock. I know not everyone will agree with me on this, but there is something truly transformative about that moment that no other game has captured. I'll put it in spoilers in case anyone hasn't played it - I mean the moment when you realise you can easily beat the entire game with just the wrench, and all the strategizing and preparation you had been doing before then was entirely wasted. It basically changed the way I looked at video games.
 
The only games i would pick that arent already called out are
  1. Alan Wake - I loved the story telling, it was one of the first games that would cause me to rewatch cutscenes. Fuck microsoft and remedy, I want a true sequel already.
  2. Psychonauts - the world was nuts.
  3. Halo 1 & 2 - a truely masterful set of games. The series has been going downhill since
