Please explain to me how an Australian citizen and resident being sued over defamatory statements in his home country, which is the only country that has jurisdiction over him, could have moved the case that was filed against himself from an Australian court to a US court.

I don't know and I don't care. I just know that an alleged cheater from America ended up winning a defamation lawsuit against a weird Australian man and no one found out about what the case was really about because the Aussie lied.

Because the lawsuit had nothing to do with cheating. He said Billy Mitchell was responsible for Apollo Legend’s suicide. Not only was there no proof, it is verifiably false and he knew it was when he uploaded the video. He would likely have been raped just as hard if not harder in an American court room.
Because the party suing is an American. Karl could have pushed to have the case take place in Billy's home country, but Karl was too busy getting hard at the idea of making Billy pay his legal fees once he wins, which is something America doesn't do.
This might be worth mentioning somewhere: in 2021 Karl started a podcast with another popular speedrunner, who goes by "TomatoAnus." I never watched it, so I don't know if there's anything worthwhile to find. In any case, apparently TomatoAnus' fans had a hateboner for Karl and dug up his past association with Goose, the PUA stuff, ect, which lead to Karl being Disavowed:
