The tempest in a teacup surrounding Stellar Blade is retarded, but on the subject of censorship:“Censorship” literally cannot happen between collaborating parties trying to create and market media.
Like it or not the audience has no say in this matter.
Demanding that people use a specific word is pedantic. You know what they mean. It doesn't matter if it's "censorship" or "self-policing" or "localization." You don't even need to use a specific word, just describe what it is that you like or don't like.
These people don't like it when content is modified for perceived cultural sensitivity reasons. It doesn't matter if some third party forced their hand, or if they felt a chilling effect that led them to make the decision on their own. There's nothing wrong with being opposed to content being modified for cultural sensitivity reasons.
