Oh I know! But he can summarise the history involving demographics quite well, and I think it provides quite useful context for the Kiwi Casino episode. It's a Vietnamese dish, typically sold with regular beef meat here in the States. It doesn't look super hard to make (just time-consuming), so maybe that Australian bowl can be recreated if there's a proper butcher shop near you.
