That's basically what I've seen from all the reviews, it works well enough despite being cheap as shit, and has a decent aftermarket.
One thing to note, the Mossberg has a tang mounted safety and the Maverick has a trigger mounted safety. If you want to use an aftermarket stock with a pistol grip, may be easier to manipulate the safety on a Maverick.

If you don't mind the traditional Mossberg rattle, it's not a bad option. Beats turkshit shotguns.

My understanding always was the maverick is a 500 with 870 style controls.

That's really subjective.
You need to be the one to try them out and decide for yourself.
See if you can rent a few at your local range.
Finger them at the gun shows and your lgs.
If your friends have one go shoot it it if you see someone at the range with one ask about it.
I had two of them, I didn't seek them out. It was just a moment of hey that's a good deal and I'm stupid so let's spend some money.
I'm not upset I did.

The aftermarket for the 88/500 is very decent, it's more difficult to find security barrels though. You can easily throw a stock on an 88 or a 500 but changing the action is more tedious if you don't have a 590 with the 7" 3/4 action slide and nut.

I bought these two parts and threw on a magpul forend for my 500. I have a shitty ATI stock and I'm probably going to take it off in place for an M4 stock adapter and a carbine stock. Some of the 500's have a pre-tapped receiver so you can easily put on the ATI saddle with a 1913 rail.

Still, glad your project seems to be coming together, and I'm glad for the input, it does have me considering the Maverick as a serious contender :)

Now you have to think like a logistician: How great is the need to share magazines? If you have a tube-fed gun that you like more, you don't need magazines in the first place.

True. But with magazines I can reload faster, and my ammo capacity increases greatly depending on the mag. Logistics and decisions indeed. Again, both are very tempting.

There are some other factors too, mainly that it's easier and faster to top up a tube mag shotgun with loose shells, and that shotgun mags are often bulky and snag on everything. Also the plastic hull of a shell can get deformed from sitting in a box mag for too long, can cause feeding issues, etc. Tube mags are more reliable generally.

The deformation of the shell is something I didn't think of, though to be fair, I'd most likely keep it unloaded with a box nearby; I still have my revolver if I don't have time. The rest are very much noted, which is why I'm not ruling out the Maverick, it's a action I already know and it's pretty reliable. I might just end up with both in the next few years lol.
 
Nevermind the pistol, check out that patch; like it began as an AR, but then the Asian embroiderer got lost in the sauce. But even better is someone at SH(?)___ COAST TACTICAL pencilwhipped & actually paid for those patches, although it's not surprising, given that mutilated & defaced abomination of a pistol.
 
I have a Mossberg Maverick. As far as I can tell, it's a discount 500. Nothing fancy, but it'll go boom when you ask it do.

Hope you don't mind plastic furniture. You can get wooden or tacticool furniture after-market.
If there's intent to change foregrip, a 500 may be better, as the action bars in the Mav are pinned to the forend and you need to buy replacement bars (and I think forend tube) to change the forend. Never actually did the math to see what comes out more though.

If going pistol grip, Mav might be better for the safety.

Also note that the Mav receiver is not tapped for mounting a rail/optic like the 500. (I'm considering one of these in that regard: https://www.adorama.com/susm4500.html )
