Where in Mexico will I not get beheaded by the cartel? Cause it seems like it's going to happen anywhere there.
Some places like the outskirts of Culiacan and Zacatecas as well as a lot of areas well within the drug trade. That's why most people when coming to Mexico visit Merida, Cancun, Puerto Vallarta and Mazatlan and go overland by bus.

Aguascalientes is calm despite being neighbour to Zacatecas, so that could be a place too, but is in the literal middle of Mexico so it has not much to offer other than the International San Marcos' Massive Public BarFair on april of each year
 
I worked with a lot of Mexicans in various restaurants when I was in college and they were great guys...once you got to know them. I took the time to learn their regional slang and backstories and we got along great and used to talk shit about the other gringos without them knowing what we were saying. Also. their racism is hilarious. They despise niggers more than all the internet chuds combined but also hate every other South American group, Guatemalans, Colombians, Panamanians, etc..

As for what I enjoy from Mexico:
  • Mexican beer (even the low grade ones are better than a lot of American piss)
  • Mexican food (both the Tex-Mex stuff that most Americans call "Mexican food" and the authentic stuff)
  • The concept of "siesta" (look it up)
  • Cane sugar vs fructose drinks (Coca Cola, Nestle Quick, etc.)
  • El Santo!
  • The Rider of the Skulls!
  • Mezcal/Tequila
 
I went on vacation there twice. I went to a local restaurant outside the resort and the food was pretty good and I liked visiting the Aztec ruins. My dad and I even got lost there and the tour group waited for us, which was nice. It was fun seeing ancient ruins. On the downside, another tour bus caught on fire, so we had to wait in traffic for hours.

The people running the resort also tried to get my parents to buy a timeshare. The resort was nice but of course it was a resort and you get what you pay for, but I liked how this resort had free roaming animals. I saw a peacock on the beach eat someone's burger and that is a funny memory to have and we had this nice concierge who was nicer than she had to be (She was genuinely nice, especially with my sister and I). All the people working there were native Mexicans and of actual Mexican heritage from what I could tell and they had all these nice handcrafted souvenirs and clothes you could buy.

I wouldn't go back though because of the rise in crime but then again I wouldn't visit most European cities right now (or most cities I suppose) or go back to Memphis, Tennessee again either. I'm from Canada, so it was just nice to get out of the cold and see a different environment but that was almost a decade ago now and I doubt it's as safe and it just feels like every country has gotten more annoying in general (Including my own, everywhere seems kind of less friendly) I'd probably just visit Florida again instead.
