Neighbour bring over youngish roosters today. She won'tkill them because she raised them. Need advice on scalding. I assume the cleaning is the same as a turkey. Any tips?
 
I usually get old chicken so I don't bother keeping the skin since I'm usually using it for coq au vin. Not worrying about the skin just makes it so much quicker/easier.
