The Donner Party wasn't as fat or used to eating as modern Americans. Imagine someone like Boogie going more than three days without stuffing their mouth with Doritos and Mountain Dew. Two weeks seems about the right amount of time before the fats of America rise up and devour anything they can get their hands on.

As much of a sperging lolcow as he has turned into over the years I will always owe a debt to Alex Jones on some level. When I was 14 I used to listen to Coast to Coast AM to help me fall asleep and he was on there one night and was talking about the deep state, bilderberg group, skull and bones, all the classics. It was pretty eye opening to realize that there really are global conspiracies that are designed to help the powerful stay in power and appoint their own successors.
People were tougher back in the 1800's. Expect to see a lot of illnesses from people eating rotten or unprepared food. The smart ones will learn to scavenge, but when the pigeons and rats run out, they'll turn on each other.
People were also better prepared to deal with conflict in those days.
The Donner party also used older techniques to preserve food that didn't require refrigeration. The achilles heel of American society is the storage of food, nobody knows how to preserve stuff.

I used to like Art Bell. Sometime after he retired from Coast to Coast he called the cops and claimed someone was trying to kill him in his yard because he heard a loud noise and assumed it was a gunshot, and it must have been someone who didn't like what he had to say. No other evidence, just a noise. He also became a big Trump supporter. Then he died under mysterious circumstances, which were later revealed to be an overdose of various pills.
