You know what, I’m going to agree with a lot of people that this thread should not have unironic pasta posts.
Why?
Well last pasta I made managed to be part aborted fetus, part vaccine and most disgustingly of all part zucchini.
Only a 3/10. Would finish only so as to avoid letting the ingredients go to waste.

It's barely any more effort to make fresh. Get canned San Marzano tomatoes, onions, garlic, oregano, maybe some wine if you feel like it, or chuck in a Parmigiano Reggiano rind if you have it, maybe basil, thyme, salt, and thicken it up with tomato paste. Or don't. You can do with just the tomatoes, oil, onions, garlic, oregano and salt though.

Canned sauce mostly sucks because it's poisoned with immense amounts of completely unnecessary sugar. Onions contribute sweetness anyway.

Start with the savories in the oil, chuck in everything else, simmer it for however long you want, and it's vastly better. You don't even really have to do anything with it, just stir it every now and again so it doesn't burn at the bottom.

Also it doesn't hurt it to throw in a nearly homeopathic level of sugar, like literally a pinch, as if it were salt. It slightly ameliorates the tartness. If you can actually taste it, you added too much.

Used half a tin of anchovies, 1/10th a bottle of pasta sauce, added in olive oil, garlic and mushroom. Cut up the anchovy fillets with the spoon and they dissolved in the sauce from cooking.

I made a bit too much sauce and I forgot how much anchovies smell when you cook them, but overall turned out pretty tasty (despite the smell from cooking). Will use the other half a tin on Thursday I think
