Simply put, where do I find any? Scars are cool, but not very good at stopping you from dying.

You want to look for rings and tattoos that improve your AC. Mempa's Biting Ring adds 2 to AC and you can get it very early on; it's cursed but you probably won't need to remove it anyway. If you transition to mage you'll get access to some items that improve your AC as well, like the Magus Guard or Magus Shield. A high dexterity also helps but that's not really the best place to dump your points.

The character  starts as a fighter - that's not a class that hangs back and lets everyone else do the work.

Seriously rogue (or is it thief) and especially mage (or is it Wizard, long time I did not play) are better for the player to use while the npc in you parties are the better tanks, also a lot of the fights are optional and often the story is better if you talk out of them (Only 1 fight is unavoidable)
 
I'll just be frank like another post, Fighter isn't what the game wants you to be. It really, really wants you to have high mental stats if possible and charisma. If you like fighter there's ranged weapon options but it may not be what you're aiming for.

There's a reason why you immediately start with a character who has a taunt in your party. They really don't intend you to stay Fighter or be up front.
