Regarding concerns for fiat, I believe that you will have two options:
1. Pay by card on a website I am going to set up on a different domain.
2. Mail a check to my escrow attorney.

The money will be held by an escrow attorney for the purpose of litigation relating to the Kiwi Farms and myself as a person.

I am very serious about this. What is happening is a sort of avalanche effect. Relatively important companies and people are just flat out lying about us in the worst way, and these baseless and dangerous false statements are adding up in a way that permits Liz Fong-Jones and the people he pays to continue to deplatform us. There's no way around it at this point. We either have to fight these claims and legally demand our existence, or we will won't be permitted anything.

Again, you may wish to go after a company that exists at the time of filing, has known owners, and more in assets than liabilities (not broke as fuck). Cloudflare, $28 billion marketcap, said Kiwifarms was responsible for "imminent threats to human life" and their termination of the service had your business to go offline. Epik has dwindling money, probably millions owed, and no known owners.

I think the answer depends entirely on the lawyer you're able to find. It needs to be someone who has a favorable view of the site or at least has other principles that align with the site being able to stay up regardless of personal taste. If a lawsuit is brought, Epik will likely fill their filings with every single accusation ever made against the site. You need someone who is willing to push back on those accusations and I'm not sure that some random lawyer-for-hire will be motivated enough to do it properly.

The other major concern is that the lawsuit could get fucky. If the jury/judge find their claims to be true for some retarded reason than it would effectively legitimize every adverse action ever taken by a host/registrar/etc against the site.

Taking a case to trial is at least $75,000.

I believe these resources should be saved for litigations against a certain wealthy individual who was the original goal.
There definitely won't be any damages you could prove for these statements alone, and they may be able to burn far more money than any pro se litigant ever could.
Then again in the interest of total war perhaps any avenue should be exploited, all foes demonstrated against.
