No need for marinating at all if you're shredding and don't immediately dispose of the braising liquid. The heat and liquid will get the meat shreddably soft. Mix some braising liquid in at the end of the shredding for flavor.

A traditional oven will get just as good results as a sous vide when you're aiming at a shredded meat, for those who don't want to get one

I'm starting to think a Film Robert version of dsp's Cooking with the King would be compelling viewing, but not in the way Film Robert hopes
