Saving data off old Samsung (without USB-C)

Yeah your options are basically get the screen replaced, play adapter roulette to try and find one that will allow video output (this one I doubt but I've never looked into it) or say au revoir to the data on the phone.

If you don't trust yourself enough to do the screen replacement DIY, don't bother trying. If you're prone to hamhanding electronics there's multiple things you can tear and make life 10x harder. I've worked on too many phones in the past from people who have the coordination of a gorilla that ended up paying double even for just simple data recovery, it's 100% worth it to pay some serb or pajeet to do it right the first time.
 
If you have some way to grant debugging capabilities (clicking at random? keyboard?), or have done so already for other reasons, get scrcpy. I also accidentally the screen on my previous chinkphone, and this works perfectly.
scrcpy is very neat, however in this scenario it's useless, as it rolls back to the need of having an adb connection, and that alone would allow for copying over the data. Personally, if I'd be able to get adb going, I would use this Total Commander plugin to access the phone. It also works on Double Commander, so you can run it under Linux.

But the issue is still that there's no easy way to enable adb, even when forcing the phone into recovery mode or something like that, so the first best bet is trying to unlock the phone blind with a keyboard and hoping that it'll appear as a mass storage device after plugging into a PC.

If that won't work, then it all boils down to replacing the screen, unless there's a way to get an MHL adapter that will not only show the phone's video output, but will also allow plugging in OTG peripherals, after which you should be able to basically use the phone fully.
 
You'll need the phone and a usb flash drive. Open up the phone and locate the storage module where the pictures are stored. Remove it from the board, and put it to the side. Take the flash drive, remove the casing, and determine where it's storage module is. Remove it, and then get a soldering iron. Solder the storage module from the phone to the usb stick, and plug it into your computer.

In the US at least, the ubreakifix stores still list the S5 as something they repair so maybe find a local shop and they'll probably still have a replacement.

It comes with the digitzer making it a very easy replacement. I replaced my S6's screen with chink shit last year and the only really annoying part was freeing the backplate from the adhesive while not breaking the glass. I had to use a hot air station but I've seen people use hair-dryers and shit like that. Dunno what it's like for the S5 but I'm sure there are guides out there.

A screen replacement is only $30ish on Amazon (for me at least) popping out the screen isn't so hard and you don't really have to reassemble it nicely.
I second this. Ease of repair (especially relative to Apple) is one of the key strengths of Samsung phones particularly if theyre old. Just look for a guide online from an Indian and you can easily replace the screen.
