I've only watched the first and second but saw that Hulu as added them all today. I'm tempted to watch the others but I don't think it'll be worth it.

Cartoons of the 90s were full of cleverly hidden adult humor. Since I grew up with those and forced my parents to watch some with me, I was later told that there had been parts where only I laughed (the kids humor) and parts were only my parents laughed (the adult humor).
The thing is most adult humor can only be understood once you've made certain experiences. Thus, innuendoes and cleverly disguised adult jokes will fly over any normal kid's head.

I never really liked Shrek
I knew the Eisner/Katz drama before I saw it so I couldn't see past "Katzenberg is literally this butthurt"
 
On the topic of Shrek 2, Shrek 2 Retold is somewhat around the corner and I'm kind of excited for it.

If only for the wish to see more stuff on the level of this one scene.

shrek wasnt really intended to be a "kids movie", its probably the closest dreamworks came to trying to do a pg-13 animated film
