Just because the majority of characters don't have epicanthic folds, normal hair colors or more than one skin tones and most of their stories is solely centered or based on the Japanese culture doesn't mean they are blind to the rest of the world, in fact there are a handful of stories that depict Asian cultures outside of the Japanese archipelago, like Kingdom or Manchuria Opium Squad (although both very brutal stories you can add your own lighter example), and if they make stories centered on their country, what's the deal with that?, don't forget that you are gravitating for a country that notoriously does that too.
