Only use soy in Asian food, other than that, it's useless.
Vegenaise is better than Mayo. Ex vegans I know still use it because it tastes way better. Sofritas from chipotle are also tasty. Soy sauce has a lot of applications like marinating mushrooms or adding to burgers if you don't have worcestershire sauce on hand. Dessert tofu is better than many yogurts. It's a versatile food. That's why you see it as an allergy warning on god damn near everything now.

I've had this soy pudding which honestly wasn't that bad.

yeah you can blend up coco powder and some sugar with silken tofu and make pudding, or freeze that and make fudgesicles. Milk's main role is to be creamy rather than flavorful in those recipes so soy works just as well. If anyone has to cut out fat or cholesterol it is a good choice.
 
The only soy I've consumed is soy sauce.

Soymilk or that soylent shit, don't touch that garbage. Beancurd, soy skin rolls, soy sauce, or anything fermented is fine when eaten in moderation and with meats and veg. You don't see Japanese or Chinese eat that by itself. Its always with other foods - meat, fish, soups. 90% of these soyboys drink soymilk, or put it in their coffee, or use tofu replacements because they are vegetarian. They put it in everything.
 
The soy-estrogen link is not accurate at all. If you used soy for all of your protein, you'd probably have issues, but that goes for any protein source. Eating some soy for protein isn't a big deal. Phytoestrogens in your diet has no effect on estrogen levels.

However, soy is not as bioavailable as animal proteins, nor does it have as good of an amino acid profile.
