AA to me is the realm of Eurojank, which this appears to be well above. If other character action games like Devil May Cry and Bayonetta can qualify as AAA, I think it's fair for Stellar Blade to count too. Digital Foundry also reviews it as being "ultra-polished":

Actually they did. I remember during GG they were pissed about a lot of the designs, in fact, a lot of people had to point out Bayonetta was designed by a woman. They're just trying to hide that past because they need to seem... "reasonable", I guess is the word to use. You see, they try to project an image of their side being the sensible side. They don't look sensible if you dig up the receipts. They're trying to be mature, everyone else is a teenage incel chud. Etc. Plus there's this weird timer they have when it's "safe" to enjoy thing.
