OPEC will likely reassess its policy of only accepting the US Dollar and likely add in the Yuan... not immediately, but some time over the 2020s.
OPEC will not, except for huge, HUGE shift in middle east politics that sees the Saudis lose nearly all clout, shift away from the dollar. But they will threaten it, especially now that Biden has fucked the US's energy independence. In the 2nd half of the Trump years the US was net-exporting petroleum product - OPEC could have embargoed us and we could have told them to pound sand, we don't need them.

China would not mandate Yuan transactions except as a dick waving contest with the US. they have sufficient Dollar & Gold reserves to oil trade with Iran.
Iran Pipeline does not really change the US foreign outlook w/r/t China. It arguably improves it, especially if it means that China stops/reverses oil import facilities in their ports and they have a very vulnerable target. China has pipelines to Russia, an oil pipeline isn't a big deal.
What this DOES change is political calculus with Iran. Iran now has a trading partner who is willing to flout international norms to the point even Russia is like "Whoa, slow down, rules exist for a reason dude". But more importantly for Iran, this means China now has a huge stake in Iran's functioning and territorial integrity.
It could be the first step to China entering into the great
