Going back to my Supreme Sorcerer Skyrim Playthrough, and I'm realizing my character is already complete. I can grind other skills for more level-up perks, but that would be boring. Racked up gold stacks, so I don't need much in terms of money either. Don't even need to do quests when I can sell my god-tier potions for entire shop's worth of gold. Guess I can do the questlines, but that'd be kinda boring too since there's no real reward for a pure mage

Money was too useless in Skyrim. I hoarded a bunch and then got bored eventually. I still had fun getting rich though. I hope TES6 gives you more of a goal.

Altmer Necromage. Using Ordinator I can roll with 7 or 8 undead minions of various kinds. Or if I want a harem of modded follower waifus I roll a Nord two-hander and use HIMBO to make him look like Conan. It's also the same build I use when I feel like doing an ethnic cleansing play through where every non-Nord is put to the blade. Then when I feel like trolling r/skyrim I make an anime cat girl and post videos of me playing with some weeb looking animation sets.

In Oblivion; Imperial Hero custom class.
Full defensive with Block and Heavy Armor, using blade rather than blunt and getting all the defensive things.
Late game is basically near 100 points of Spell Absorb (with Atronach's Birthsign and gear), near 80 points of Reflect Damage (with gear), completing Fighters and Mages guild questlines along with the Main Quest and completing KotN with Shivering Isles with Mania.
In Skyrim is the classic Nord Barbarian build, but with gameplay mods. Nothing special.

Bosmer, hand-to-hand, unarmored, acrobatics, athletics, alchemy.
Break my stats through alchemy and unleash the rage of a manlet desperate for his next fix on the unsuspecting.

Dunmer, illusion, alteration, mysticism, destruction, unarmored.
Ye old Telvanni because I am very original.

The Dunmer one is the one I play the most but roleplaying the former is funny.
