Well if you liked stuff like Dark Souls, I would suggest the King's Field games.

They're the predecessors to the Souls series, and while the graphics are a bit dated and controls take some getting used to, the atmosphere and level of exploration more than makes up for all that.

In addition to King's Field, Shadow Tower is another underrated From Software title for the PS1.

Similar to King's Field save for the fact you have weapon durability that can be fixed either by an item which is best used as a fall back and from blacksmiths who'll take some of your health as payment. There's also the lack of music save for the game's intro and ending. It does add to the ambience though enemy designs are what will stand out, especially as you go further through the tower.

I'm not sure if you would consider Soul Reaver and Blood Omen to be underrated (they both sold well and got good reviews back then) but I think those are nowadays two fairly underrated games, especially Soul Reaver. If you like Zelda style games but with a darker tone, those are really fantastic games. (more so Soul Reaver than Blood Omen)

Also, I heard Alundra is a really good game, but I haven't played it much so I can't comment on that.

I grew up with a N64 person but I enjoyed Die Hard Trilogy especially the 1st movie run and game game with the pumping music and Bruce Willis imitator one liners.
Disruptor is a pretty cool FPS shooter with PSI power mechanic.
Crusader: No Remorse for a isometric shooter
Bloody Roar 1 and 2 for a good fighting game
Mega Man Legends 1 and 2 and Tronne Bonne, The best Mega Man series

I modded my PS1 a year ago and yet to mess with the library. Should mess with it later.

OT, but Bloody Roar 1 and 2 had fantastic soundtracks! Jenny's theme was always my favorite:

Wild Arms 1 and 2 had a pretty modest reception internationally so they might fit what you're looking for. Also Threads of Fate.

I've got to suggest some of these previously listed games too: The Legend of Dragoon, Legend of Mana, Valkyrie Profile and Dragon Quest VII. There was a PSP rerelease of Valkyrie Profile but I don't remember what was changed from the original release and as for DQVII, it gets kind of tedious, but I still find it fun to replay. The 3ds release streamlined a lot of stuff, though.

I played some of King's Field 4 on the PS2, it was so confusing and obtuse and bizarre I loved it. The turn rate is a huge frustration.

My favorite part of the game is when you start a new game, if you walk forward, the ground in front of you will immediately sink and you will fall into lava and die, because you pressed forward when you started a new game.

DQ VII on the PS1 is very grindy RPG and I believe the 3DS makes it more tolerable.

King's Field 4 was how I was introduced to the series, and it pretty much one of my most favorite PS2 games. It truly is something special.

I've played both and I honestly enjoy a lot of the improvements of the 3DS version. I just can't stand the English re-translation because every time a handheld DQ game gets released outside of Japan they go overboard on the accents. I can't really remember if they were as grating in the original release of DQVII, but some towns are ridiculous on the 3DS.

Disruptor was a game i had when i had a ps1 from i remember it was a decent doom clone and Muppet Monster Adventure was pretty good for being a licensed game

and a couple other games i would recommend is tenchu if like ninja/stealth games, i used to play the second one all the time especially I had fun making stupid levels with the level editor

Seeing as the PS1 was one of the consoles that defined my childhood, and that even after PS2 came out, I kept buying old PS1 games and playing them on the PS2 for many years, I'll admit that there were a lot of great games I loved on the PS1 that are either completely underrated or were popular back then and completely forgotten now.

Just a few games worth mentioning....

Digimon World 2
Dino Crisis 2
Syphon Filter
(the whole trilogy was awesome)
Army Men 3D
Spider-Man
Army Men: Air Attack
X-Men: Mutant Academy
(and its sequel!)
Gunfighter: The Legend of Jesse James (a Western-themed clone of Time Crisis)

I was about to recommend Monster Rancher for a nice, slow burn pet sim with elements of fighting, exploration, and collecting, but I have no idea if that game would even work on an emulator. In the original you needed CDs and other game disks to spawn monsters.

Anyway, I'm going to second Blood Omen and Soul Reaver.

It's strange because KF1 had also a very slow turn rate and they increased it in KF2 and 3, but for some reason slowed it down in 4. Maybe because of balancing reasons idk (I haven't really played KF4 but it's an interesting thing to point out coming from KF2) I'm gonna second Hogs of War, that game was great fun and I would say it's like Worms in 3D but before Worms 3D was ever a thing.
Die Hard Trilogy as well, another underrated PS1 classic.
