He definitely has severe psychological issues. I think most of what you're seeing comes down to his issues with role-playing and his sense of identity. Jace's concept of "real" vs. "fantasy" worlds is really fucking weird and blurry.The thing I notice is that his emotional outbursts can be turned on and off like a switch. He will go from totally lucid and calm, to screaming, tear-wracked blubbering, right back to neutral in no time. Either he 1) has the emotional depth of a gnat, 2) has a SEVERE psychological issue (unlikely, or he'd have been instituted by now) or 3) he's fucking with us.
First, Jace has shown an incredible amount of empathy for the fictional characters or beings that inhabit his fantasy world. John Cena, Soap, Jack Stryker, etc exhibit amazing amounts of emotional response from him, to the point where he feels their emotions as if they are his own or as if they were real people
Another thing to consider is that he willingly submersed himself in these traumatic childhood memories as a form of psychiatric role-play, something which he overtly announced at the beginning of the stream. He's confronting his fears in a very safe environment so it's easy for him to distance himself from the negative consequences and walk away from them; this is why he can "turn them off" so to speak more easily than if it was happening in real-time. Take Dicksquad's assault on him earlier in the stream for example. That soured his mood for a good long time because he wasn't able to actually "turn it off", he wasn't in control of it, it still lingered and bothered him. In contrast, he can just stop playing The Sims and go to bed anytime he wants and he knows that.
He also experiences unpredictable mood swings an awful lot and he can go from 0 to 60 and back with little notice if you press the right buttons, as we've seen countless times before.
Not to say this explains his behavior 100% but my point is that there are a lot of underlying psychological factors at play here that we really don't know very much about. We only see what he allows us to see, after all. There's a lot about Jace that is still pretty unclear.
He also takes some very crucial safety steps that true lolcows like Chris never think of: we never (really) see his un-sunglassed face online, nor Gail's or Robert's face. I highly doubt that the same man who runs around screaming "PRESS ONEEEEEEEEEE!!!" would have the foresight needed to keep the identities of the people he really dislikes (or his own) as secret as he does.

That's not to mention the faces of Colby, Tyce and Eli, we also know the make and model of Jace's car (red Toyota Prius according to his DarkRP server) and where he lives... etc etc etc. I would chalk up his "caution" to Robert, honestly. I think in the earlier months and years he made a LOT of simple mistakes in disguising his identity but recently he's become way more cautious, and I think it's because of Robert. Robert seems to be a fucking wizard in terms of keeping himself out of the saga, and I think he probably passed it on to Jace or at least tutored him in basic tactics to prevent doxing himself further - a good example is not giving out "Pastor Faggot"'s name or cell #. Rob even went through the trouble of setting up some crazy homebrew VPN connection for Jace at one point so that trolls couldn't geolocate his IP - as we've seen that didn't exactly work because Gamerfood doxed him anyway, but you get what I mean.
How so? The most I've really seen him do is say "fuck you trolls I'm not going to give you what you want! Get a life nerds!" and cut the stream which isn't really tricky as much as it is the first lesson in Internet Culture 101: "don't feed the trolls" Granted it's taken him two and a half years to learn it, but still.Now, I'm not 100% discounting 3 because Jace has shown himself to be pretty tricky and has successfully fucked back with people before
