What Game Have You Replayed The Most? - What hasn't lost it's replay value

The original Crash Bandicoots. Just for the N. Sane Trilogy alone I've played all of the 3 games to completion at least seven times, including every single Platinum Relic across the entire trilogy. Stormy Ascent still makes my thumbs hurt.
 
Halo 3 and Halo PC still hold up quite well, especially since there hasn't been a good Halo game in years.

Probably Chrono Trigger, Fable 1 and 2, the Mass Effect trilogy, Fallout 3, Bioshock 1 and 2, Shenmue 1 and 2, Silent Hill series, basically anything that has a bunch of collectables/different endings and stuff to do.

When I was younger I used to play a full game of Paper Mario every weekend. This went on for about a year or so and I've done many replays of it since (at this point I still play it at least once a year) so it's very likely to be my most-played game of all time.

Other games I've played a lot include Super Mario Bros. 3, Super Mario RPG, Chrono Trigger, River City Ransom, Bomberman Hero, Super Metroid, Metroid Prime 1 and 3, and Diddy Kong Racing.
 
I got a few:
Fallout 2 was one of the games I replayed the most. It helps that there's a restoration patch that adds in cut content though I don't like how later version of said patch made changes like not being able to talk out an ex-Chosen One from killing me.

Armored Core 4: For Answer is one I've beaten a few times though it can be pretty short even with having three different paths to choose from.

Gothic is one I enjoyed replaying after I got the hang of its combat system.

Wizardry 8 is likely to be up there with Fallout 2 in the number of times I replayed it. I especially enjoyed the last two playthroughs since those were pretty much LP's I made for the Farms using a few Kiwi's like @Jaimas and @Cosmos as party members.
 
Also, Super Mario RPG. Got it brand new when I was 9. No clue what an RPG was but I for damn sure knew and loved Mario games! Words could not describe my disappointment at whatever sad kind of Mario game that was where you can't just run around jumping on shit. Fuck that.

Gave it another chance like a week later. Realize it's fucking amazing. Holy shit I love RPGs now. 23 years later it's still a favorite and never gets old, also am a huge RPG fan and don't really care for platformers anymore. All because of that game.
 
TES 3: Morrowind, still comitting mass omnicide in vvardenfell. Vivec, when all of morrowind is in ashes, you and your pathetic city is next.

I would say Yakuza 3, played it 5 times. Music was great, the characters were fantastic and there was a lot of replay value. Didn't give a shit about the cut hostess shit. Hostess stuff in Yakuza games apart from 0 and Kiwami 2 is just boring bullshit.
